An addendum to my post 2 days ago: I tried Sartori Sarvecchio cheese. I now feel the need to seriously question Ethan Chlebowski's palate. Sartori Sarvecchio isn't even CLOSE to a DOP Parmigiano Reggiano. They don't inhabit the same solar system. One is Alpha Centauri and the other is a bit of dust and rock floating in some far-flung, forgotten corner of the cosmos. Parmigiano Reggiano is the King of all Cheeses for a reason. There is no substitute. 👑
